About Nisin
Nisin is a polypeptide produced by fermentation.[1] Its properties and sensory feel in a finished product may vary depending on the formulation concentration, the ingredients used with it, the formula’s acidity, and manufacturing conditions. In cosmetics, it is used to inhibit the growth of microorganisms.[2] It is included as a preservative to inhibit microbial growth in the product and delay spoilage.[2]
